Quick and easy breakfast recipe - cottage cheese muffin

          Who has time for a 'bake it from scratch' recipe - specially in weekday morning? I always look for some shortcuts in recipes I like, here is one of my favorite concoction. This muffin is great combination of taste and nutrition - a must try recipe.

          If you aren't a good baker, you may have hard time in baking recipes. When it comes to "bake it from scratch", I am nervous, too. I am not a big fan of cakes, still I enjoy some of the baked recipes.

         This is not a regular muffin recipe, you will be glad you came across this recipe adventure. Egg  and cottage cheese provide good amount of protein you need to keep you going all day along with calcium. Add some chopped walnuts for additional protein and good fat.


Healthy muffin - dessert with nutrition.

           Once I had a pistachio muffin at my work cafรฉ, from local bakery. Not being a big fan of cakes-cupcakes and being in favor of home made meals over the ready to eat - store brought, I was hesitant to try it. 

          Surprisingly, it was not so moist and greasy like other calorie laden baked goods. I liked the taste and texture of it, still it was a bit over my calorie limits. And other things I was concerned of were baking measurements and timings. So thought of making that recipe healthier, easier and quicker.

          First thing I tried to find a substitute for butter, I did start with avocado. Avocado has that natural green color I loved in pistachio muffin and has a buttery texture. To combine all dry ingredients, I ended up using more avocado which resulted in even calorie counts with regular muffins.

          Then I did try to use my second favorite ingredient - cottage cheese. It worked out, here I was able to control fat content by using fat free cottage cheese or going low fat.

          After achieving this, still it was a bit overwhelming to find all of the dry ingredients in morning. Either I had hard time to find all of my measuring cups or ended up missing one of the key ingredient like baking powder and ๐Ÿ˜ - another baking disaster!

          When I combined all of the dry ingredients, thought we have all of this ingredients already combined in a pancake mix! That's it! I took pancake mix instead of the dry ingredients required and you can see the result!

As preparation time is just 10 minutes, you can bake them in morning, too. Preheat the oven, mix ingredients, scoop it in muffin pan, set the timer for 25 minutes - you can do other chores around that time.

๐Ÿ’ฎ Ingredients: 

1      Large egg
3/4   Cup Pancake mix
1/4   Cup cottage cheese
1/4   Cup frozen blueberry (optional - Or use 1 tbs sugar + 2 tbs milk)
2      Tbs chopped walnuts (optional)
1      Tbs chocolate chips (optional)

๐Ÿ’ฎ Preparation time: 10 minutes

๐Ÿ’ฎ Baking time: 25-30 minutes based on material of muffin pan.


๐Ÿ’ฎ Recipe: 


          ๐Ÿ‘‰Preheat oven to 350 degree.


          ๐Ÿ‘‰In a mixing bowl, beat one egg with cottage cheese gently with fork.         Do not over mix it.

          ๐Ÿ‘‰Add vanilla essence and/or few drops food color, if you like.


          ๐Ÿ‘‰Add pancake mix.


          ๐Ÿ‘‰Add frozen berry of your choice or 1 tbs sugar.


          ๐Ÿ‘‰See the consistency and add tbs milk if required.


          ๐Ÿ‘‰Add some walnuts or chocolate chips.


          ๐Ÿ‘‰Scoop it into a well greased or lined muffin pan and bake it for 25 -30         minutes.


๐Ÿ’ฎ Serving suggestion: Usually two muffins for breakfast or kids lunch.
